Brown the sausage for 2 minutes on each side.
Fry the bacon in a skillet, then blot off excess grease.
Deglaze the pan with a little beef stock, scraping off the browned bits.
Layer the sliced onions in the pot.
Add the bacon & parsley on top of the onions.
Top it off with the sliced, browned sausages.
Cover tightly with an oven-safe lid or two layers of foil.
Finish it off with potatoes, parsley, pepper, and broth.
Bake at 450°F for 40 minutes, then uncover & bake for 25 minutes.
