HOW to decorate a Christmas cake

Warm the apricot jam in a saucepan, then push it through a sieve to remove lumps of fruit.

Brush the cake with the warmed, sieved jam. This will help the marzipan stick!

Roll out marzipan (or fondant) and cover the cake.  Let it dry for 4-7 days, or until hardened.

Cover the cake with fluffy royal icing, making it look snowy and festive. Let it dry for 2 days.

Top with Royal Icing

Secure a festive ribbon around the cake with a clean pin, and add figurines on top if desired.

Slice the cake into wedges or fingers and serve.  This showstopping Christmas cake won't last long!
