These beautifully shaped Swedish saffron rolls are served on December 13 to celebrate St. Lucia Day.
Toast the saffron at 275°F for 10 min, then crush and soak in 3 tablespoons of boiling water for 30 min.
Let the dough rise until it's doubled in size, then split the dough into 12 equal pieces with a bench scraper.
Roll each ball of dough into a long rope. We'll twist each one of these ropes into a differently shaped bun!
There are cats, ram's horns, Baby Jesus, priest's hair, and many other fun shapes to try!
Let the buns rise for 30-45 min, then brush with egg, decorate with raisins, and bake at 375°F for 18-20 min.
Serve these freshly baked St. Lucia buns with a cup of hot coffee and enjoy these delicious treats!
