INGREDIENTS

Gather the ingredients for the grits and the shrimp sauce before you start.  That makes cooking fast and fun!

Make the Grits

Whisk the grits into boiling stock and cook until thickened.  Whisk in the add-ins, but reserve the cream to add before serving.

Cook the Sausage

Start by sauteing the andouille sausage in bacon fat until it's browned; then set aside.

Saute Aromatics

Using the grease in the pan, saute the green onion until softened, then add the garlic and cook for 1 minute.

Add the peeled and deveined shrimp along with the spices and lemon juice.

Deglaze the pan with a little chicken stock and scrape off the brown fond.

Thicken

Sprinkle some flour into sauce and shrimp mixture, then stir and cook until the sauce has thickened.

Finish the Sauce

Pour in the cream and gently simmer the sauce until it has thickened, about 3 minutes.

Heat Through

Add the browned sausage back to the pan and stir until it's heated and coated in sauce.

Fill shallow bowls with the grits, then top each one with 5-6 shrimp and the sauce.  Enjoy immediately!
