Skillet Shepherd's Pie

INGREDIENTS

Gather the ingredients for the mashed potatoes and the beef filling before you start.  That makes cooking fast and fun!

Mashed Potatoes

Boil the potatoes until they are fork tender, then mash them in a stand mixer.  Stir in the add-ins to taste, then set aside.

Brown the Beef

Cook the ground beef in the skillet until it's no longer pink, then drain off the excess fat.

Saute Veggies

Heat a tablespoon of the drained beef fat, then add the carrots and onion and saute.  Add the garlic and spices and cook for 1 minute.

Start the roux for the gravy by cooking the flour and butter for 2 minutes.

Mix the cooked ground beef and frozen peas into the sauteed veggies.

Assemble

Add the stock to the gravy and simmer to thicken, then add the gravy to the meat mixture.  Spread the mashed potatoes on top.

Brush & Bake

Brush with an egg white and sprinkle with paprika and cheese. Bake at 400°F for 20 min, then broil until it's golden brown.

Time to Serve!

Let the shepherd's pie sit for 10-15 minutes, then scoop out individual servings and enjoy while it's hot.
