WHAT YOU NEED

Grab these ingredients, and let's cook up this creamy sausage and gnocchi soup!

BROWN.

1. Brown the hot Italian sausage until it's fully cooked. 2. Thoroughly drain out the excess fat to make the soup less greasy.

SAUTE.

Saute the onion until it begins to brown, then add the garlic and cook for 1 min.

Add the spices and cook for 1 min, then deglaze the pan with a little broth.

SIMMER.

5. Add the chicken broth, pimentos, and bay leaves. 6. Add the gnocchi and simmer until it floats to the top, then cook for another 10-15 min.

FINISH.

Add the kale and cook until it's wilted, about 2 minutes.

Remove from the heat and add the cream or coconut milk.

Serve.

9. Adjust seasonings to taste, then add the Parmesan. 10. Serve hot with extra Parmesan and parsley.
