Get a great recipe
Use bread flour for the dough
Knead & prove the dough well
Mix the flour, salt, and yeast, then add the wet ingredients and stir with your hand to form a dough.
Add the milk and knead the dough until it's smooth, then let it rise (aka prove) until doubled in size.
While the dough is rising, prep the strips of paste and the guava paste and candied cherries.
Form the dough into a ring shape, cover with plastic wrap, and let it rise until it's springy to the touch, about 45 min.
Brush with egg and decorate, then bake at 400°F for 10 min and then at 375°F for 10-15 min.
Insert a plastic or ceramic baby Jesus figurine into the cooled Rosca before serving.
Let the Rosca de Reyes cool, then slice it and enjoy with a fragrant cup of chocolate caliente.
