You don't need too many ingredients to make this delicious vegan soup!

INGREDIENTS

SAUTE

Roast the cauliflower on a cookie sheet at 425°F until browned, then saute the onions.

SIMMER

Add the apple and cook until softened, then add the remaining ingredients and simmer.

PUREE

Puree the soup in a blender until smooth, then stir in the coconut milk and heat through.

SERVE

Remove from the heat and add the lemon juice, then ladle into bowls and serve.

Garnish each bowl of soup with extra roasted cauliflower and green onions.  Enjoy it hot!
