English Plum Pudding (Christmas Pudding)

What You Need

Grab these ingredients, and you'll be ready to make your own delicious Christmas plum pudding from scratch.

Dried Fruit

Toss the dried fruit and apple chunks in the orange juice and brandy and let stand for at least 1 hour (or preferably overnight).

Batter

3. Beat butter and sugar until light, then mix in eggs and molasses. 4. Fold in the dry ingredients.

4. Add the almonds and dried fruit and stir to combine. 5. Pack the batter into a greased pudding basin.

Steam

6. Secure a cover of parchment and foil on top with string and make a handle. 7. Steam for 4 hours, adding more boiling water as needed.

Mature

8. The pudding is done when a skewer comes out clean. 9. Let it cool, then recover and let it mature in a cool, dark place for at least 4 weeks.

Reheat

Once the pudding has matured, steam it for 1 1/2 hours.  Turn out of the basin and flame with brandy if desired.
