Panera Turkey Chili

Lots of spices and veggies make this healthy soup a flavorful dinner!

This chili tastes better than Panera's!

Brown & drain.

1. Brown the ground turkey until it's fully cooked. 2. Drain it well to remove excess grease.

Sauté.

3. Sauté the veggies until softened. 4.  Add the spices and bloom for 1 minute.

Tomato paste.

Add the tomato paste and stir and cook until it's lightly caramelized, about 1-2  minutes.

Deglaze.

Pour in a little chicken stock and scrape off the browned bits from the bottom of the pan, then add the rest.

Add more stuff.

Dump in the molasses, green chilies, tomatillos, and browned turkey.

More veggies!

Pour in the tomatoes, shelled edamame, and corn and simmer for 30 minutes.

Almost done!

Add the chickpeas and kidney beans and simmer for 20 minutes. Add the lime juice and cilantro.

Finishing up.

Adjust seasonings to taste, then serve with your favorite toppings.

Serve with kettle chips, fruit, or a slice of baguette like Panera does and enjoy!
