INGREDIENTS

Start with whole bean coffee, a kettle full of filtered water ready to boil, and a moka pot.

Pour the coffee into a conical burr grinder.  Grind on a medium setting so it is a little coarser than granulated sugar.

Back to the Grind

Bring the kettle of water to a boil, then pour the hot water into the lower chamber, filling it to just below the safety valve.

Fill It Up

Pour the coffee grounds into the funnel, tapping the side to remove air pockets, then use a knife to level the top.

Coffee Time

Screw the two chambers together using a towel to protect your hands.  Place over low heat.  In a few minutes, the coffee will start flowing!

Heating It Up

Turn off the heat when the chamber is half full.  Once the stream of coffee is honey colored, close the lid.

Almost Done!

Immediately plunge the lower chamber into a bowl of ice water to stop the extraction.

Stop Extraction

Pour the freshly brewed coffee into demitasse cups, add sugar or cream as desired, and enjoy immediately.
