1. Brown the beef chunks in oil in three batches.
2. Cook the onions until they are golden brown, stirring frequently.

Add the carrot and celery and cook for 5 minutes, stirring frequently.
Add the beef, broth, and spices and simmer for
1 1/2 hours.

5. Remove the bunch of thyme.
6. Stir in the turnips and potatoes and cook for another 35-45 minutes, until the potatoes are tender.

Bake.
Cover with pastry and brush with beaten egg. Cut a few vent holes.
Bake at 400°F for 45 minutes, or until the pastry is golden.
