How to Make Scotch Broth

Start the Broth
1. Brown the lamb neck meat in oil, turning occasionally.
2. Add the remaining ingredients and simmer for 2 hrs.

3. Remove the lamb pieces, remove the bones, and cool.
4. Refrigerate the broth overnight, then strain out the fat.

Sauté
5. Sauté the veggies in oil until they are softened.
6. Deglaze by adding a little broth and scraping off the browned bits from the bottom.

Add Lamb
7. Add the broth and other veggies and simmer for 1 hour.
8. Season with salt and pepper, then add the lamb and cabbage and simmer 10 minutes.
