Ham & Bean Soup Recipe

What You Need

You don't need a lot of ingredients to make a comforting pot of leftover ham and bean soup!

Quick Soak

Rinse and pick through the dried beans, then boil them for 2 min. Let stand for 1 hour. Repeat once, or until softened.

Sauté

Cook the mirepoix in oil until softened, then add the dried spices and cook for 30 seconds. Deglaze with chicken stock.

Simmer

Add the remaining ingredients and simmer for 2 hours with the lid on.

Adjust

Adjust seasonings to taste, then add the cream and stir. Heat through if needed.

Enjoy!
