Cook the Lentils

1. Boil 6 cups of water, then add 2 cups of green lentils. 2. Cook for 5 minutes, then let it stand covered for 10 minutes.

Sauté

3. Drain the lentils and set aside. 4. Sauté the onion and garlic, then add the spices and cook for 30 seconds.

Simmer

5. Add the cooked lentils, broth, curry paste, ginger, and tomato paste and simmer for a few minutes. 6. Pour in the coconut milk.

Season

7. Gradually add the spinach and cook until it's wilted. 8. Serve the green curry lentils with rice or naan bread.
