You probably already have most of these ingredients in your fridge or pantry.  Let's get baking!

what you need

beat

Beat the cream cheese with a mixer until it's smooth, then mix in the sweetened condensed milk until blended.

tint

Stir in the peppermint extract and food coloring.  Add a little extra dye, as it will lighten when the cream is added.

whip

Pour the whipping cream into a bowl and whip until it forms stiff peaks. Be careful not to overbeat!

fold

Gently fold the whipped cream into the cream cheese mixture with a flexible spatula.  Make sure there are no lumps.

assemble

Spread the filling in a 9-inch Oreo pie crust and decorate the edge with mint Oreos cut in half.

freeze

Cover the pie with aluminum foil and freeze for at least 20 hours. This gives the pie its cheesecake-like texture.

serve

Let the pie sit out of the freezer for 10 minutes, then slice with a hot knife.  Enjoy this frozen grasshopper pie!

expert

Use full-fat cream cheese for the best texture.

Make your own crust with mint Oreos for extra flavor.
