Make the gingerbread syrup by dissolving the sugar in water with the spices. Simmer for 20 minutes.

Assemble

Strain out the spices and let the syrup cool. Pour 3 tablespoons of syrup, 1 shot of espresso, and vanilla extract into a mug.

Steam and froth 1/3 cup of milk until it's doubled in volume. Pour into the latte and garnish with nutmeg if desired.
