Fill the lower chamber of a moka pot with water to the valve.

Spoon ground coffee into the funnel, then level it off.

Carefully screw the upper chamber onto the moka pot and place over low heat with the lid open.

Once the first few drops of coffee have come out, mix them with the sugar.

Beat the mixture until it's a light caramel color.

Once the stream of coffee is honey colored, shut the lid and stir it into the espumita. Watch the foam float to the top!

Pour the Cuban coffee into small cups, making sure everyone gets some espumita.
