Irish Colcannon (Mashed Potatoes)

What You Need

You don't need a lot of ingredients to make this mouthwatering colcannon!

Cook the Potatoes

Boil the potatoes with a little salt until they're fork tender. Wilt the kale in a skillet greased with melted butter.

Sauté

Add the green onion to the kale and cook for 2 minutes, then pour in the cream and heat through. 

Mash

Drain the potatoes in a colander, then put the potatoes back in the pot until they're dry. Mash by hand or in a stand mixer.

Season

Add the cooked kale mixture to the potatoes, and stir in the seasonings. Serve with butter and enjoy!
