Panera Chicken Wild Rice Soup

What You Need

You don't need a lot of ingredients to make a tasty batch of Panera chicken wild rice soup!

Sauté

Cook the carrot, onion, and celery until soft, then add the garlic and  spices and cook for 1 minute. Add the flour and cook for 2 minutes.

Toast the Rice

Add the wild rice and cook for 1 minute. Deglaze by pouring in the chicken stock and scraping the bottom of the pot.

Simmer

Add the chicken stock and water, then add the sugar and parsley. Cover and simmer for 30 minutes to cook the wild rice.

Almost Done!

Add the chicken, evaporated milk, and cornstarch slurry, and cook for 15 minutes. Remove the bay leaf before serving.
