WHAT YOU NEED

1. Saute the mushrooms until they're soft, but slightly firm. 2. Cook the onions until they're golden, then add the garlic and cook for 1 minute.

Add the spices and cook for 1 minute, stirring constantly.

Pour in the wine and scrape off the browned bits from the pan.

Assemble.

Add the aromatics, mushrooms, chicken, and peas and adjust seasonings to taste.
