Candied Lemon Slices

What You Need

You only need three simple ingredients to make a batch of delicious candied lemon slices!

Slice & Blanch

1. Wash and slice the lemons crosswise into 1 cm slices. 2. Blanch them in just-boiled water for 1 minute.

Make the Syrup

3. Immediately drain the slices and shock them in an ice bath. 4. Dissolve the sugar into the water to make simple syrup.

Simmer

5. Bring the simple syrup to a gentle simmer, then add the lemon slices and cook for 1 hr. 6. Spread on a wire rack set over a cookie sheet.

Almost Done!

7. Dry the lemon slices in the oven at 175°F for 2 hours. 8. Roll each slice in sugar and allow them to cool completely.
