Candied Ginger Recipe

What You Need

You only need three ingredients to make this easy candied ginger: water, sugar, and ginger.

Prep the Ginger

1. Peel the ginger with a spoon or knife to scrape off the skin. 2. Thinly slice the roots with a knife or mandoline.

Blanch

3. The ginger should be in thin slices, about 1/8 inch. 4. Blanch them in simmering water for 30 minutes.

Simmer

5. Drain the ginger and reserve all of the liquid. 6. Dissolve the sugar in 1/2 cup of the liquid, then simmer the ginger in it for 35-40 minutes.

Toss & Dry

7. Drain the ginger on a wire rack, then cool briefly and toss in sugar. 8. Let it cool completely, then enjoy!
