You'll need a few basic ingredients to make boxty. Here's what to grab from the grocery store!
Coarsely grate 3 peeled raw potatoes into a clean kitchen towel. Make sure you're using a floury variety, such as russet.
Place the grated potato on a clean kitchen towel and wring out most of the moisture.
Mix the mashed potatoes and grated potatoes, then add the flour, baking soda, salt, sugar, and bacon grease and mix.
Add buttermilk until the batter reaches the consistency you want. Use 1 ½ cups for a thick batter.
Let the batter rest for 20 minutes, then cook the pancakes for 4 minutes per side in a hot cast iron griddle or skillet.
Keep the pancakes warm in a 180°F oven while you cook the remaining pancakes in the griddle.
Serve the boxty pancakes with chives, sour cream, bacon and eggs, or a full Irish breakfast. Enjoy this delicious piece of Ireland!
