Non Alcoholic Strawberry Mint Spritzer Recipe

Non alcoholic strawberry mint spritzer is an easy summer mocktail that’s made with flavored simple syrup, fresh strawberries, mint, lime juice, and sparkling water.  Serve this fun summer drink at a party, and everyone will want a refill!



For the Strawberry Simple Syrup

  • 1 cup granulated sugar (200g)
  • 1 cup filtered water (236 ml)
  • 1/2 cup frozen strawberries, sliced (58g)
  • 1/4 teaspoon vanilla extract

For the Mint Simple Syrup

  • 1 cup granulated sugar (200g)
  • 1 cup filtered water (236 ml)
  • 1/2 cup fresh mint, chopped

For the Strawberry Puree

  • 1 pound fresh strawberries, hulled and sliced (453g)
  • 2 tablespoons lemon juice (30 ml)
  • 1 tablespoon granulated sugar (12g)
  • 1/2 cup fresh mint leaves

For a Pitcher

  • 2/3 cup mint simple syrup (160 ml)
  • 1 cup strawberry simple syrup (240 ml)
  • 1 1/4 cup strawberry puree (300 ml)
  • 1/3 cup freshly squeezed lime juice (80 ml)
  • 3 1/3 cups sparkling mineral water (790 ml)
  • 4 fresh strawberries, for garnish
  • 4 sprigs of fresh mint, for garnish


Making the Flavored Simple Syrups (15 min + 1 hr steeping)

  1. Make the basic simple syrup.  Place 1 cup (200g) of granulated sugar each in two saucepans, then add 1 cup (236 ml) of filtered water to each saucepan.  Place both saucepans over medium heat and stir until the sugar is dissolved.
  2. Make one part strawberry flavored.  Add 1/2 cup (58g) of defrosted, sliced strawberries to one saucepan and bring to a boil.  Simmer for 10 minutes, then add 1/4 teaspoon of vanilla extract, remove from the heat, cover, and let steep for 1-2 hours.  Strain before using.
  3. Make one part mint flavored.  Add 1/2 cup of chopped fresh mint to the other batch of simple syrup.  Simmer for 5 minutes, remove from the heat, cover, and steep for at least 1 hour.  Strain before using.

Making the Strawberry Mint Spritzer (30 min maceration + 10 min)

  1. Optional: macerate the strawberries.  Slice the fresh strawberries and toss with the lemon juice and granulated sugar.  Cover and let stand at room temperature for 30 minutes, stirring occasionally.  This will release the strawberries’ natural juices and increase their sweetness.
  2. Puree. Place the sliced strawberries and fresh mint in a blender and blend until smooth.
  3. Stir.  Pour the puree into a large pitcher and mix with the strawberry simple syrup and mint simple syrup.  Add in the freshly squeezed lime juice and sparkling mineral water.
  4. Garnish.  Pour the drink into four 17-ounce stemless wine glasses.  Garnish each glass with a few ice cubes, a fresh strawberry, and mint sprig.  Serve immediately.

Use the following quantities: 3 tablespoons mint simple syrup (45 ml), 1/4 cup strawberry simple syrup (60 ml), 4 1/2 tablespoons strawberry puree (67 ml), 4 1/2 teaspoons freshly squeezed lime juice (22 ml), and 3/4 cup + 1 tablespoon sparkling mineral water (190 ml).
