It’s an American breakfast classic that is known by many different names.  Maybe you’re more familiar with toad in the hole or bird in the nest.  No matter what you call it, this recipe is basically toasted bread with the center removed and replaced with an egg and fried in a skillet.

What ingredients are used in making egg in the hole?

  • Bread: sliced
  • Fat: butter, olive oil, or bacon grease
  • Eggs: cracked whole, separated, or scrambled
  • Spices: salt and pepper
  • Optional Add-ins: grated cheese, fresh herbs
  • Optional Meat: crab salad, bacon
  • Optional Garnish: hot sauce, chives, green onions

What can I use to make the hole in the center?

  • Biscuit Cutter: 2 inches wide
  • Cookie Cutter: circle, heart, or star
  • Small Drinking Glass
  • Knife: to cut a square shape
  • Your Child’s Mouth: ask them to fold the bread in half and take a bite out of the center.  Of course, this would be theirs to eat.

What can I serve with egg in the hole?

How to Make Egg in the Hole

Gather all the ingredients: thinly sliced bread, butter, eggs, salt, and white pepper.  Make the crab salad and grate the smoked Gouda.

Make 6 stacks of bread that are 3 slices high.

Spread butter on the top and bottom slices of the bread stack.  (The middle slice will have no butter on it.)

Using a biscuit cutter, gently press down and twist to make a circle in the center of the bread slices.  If you want a heart shape, use a cookie cutter.

Take the top slice of bread off and spread two teaspoons of homemade crab salad.

Melt one tablespoon of butter in a 10-inch stainless steel skillet over medium heat.

Carefully place three stacks of bread in the skillet, making sure the buttered side of the bread is touching the skillet.

Crack an egg into a bowl, prick the yolk with the tongs of a fork, and lightly beat it.  Add 1/3 cup of grated smoked Gouda and mix it in with the egg.

Carefully pour the egg and cheese mixture into one hole.  Repeat this step with the other two holes.

Sprinkle salt and white pepper on the egg.  Cook the egg for two minutes or until the egg has set enough to flip it and the bread is golden brown.

Flip the egg in the hole sandwiches and cook for another minute or two.  You’ll want the bread to be golden brown and the eggs cooked.

Place the first three egg in the hole sandwiches on a large oven-proof plate and keep them warm in a 180F oven.  Repeat the above cooking steps with the remaining three stacks of bread.

After all the egg in the hole breakfast sandwiches are cooked, place them on the large cutting board and slice them in half on the diagonal.

Serve warm.  If you need to have your breakfast on the go, wrap the egg in the hole sandwich in wax paper or a paper napkin and enjoy.

Pro Tips for Making Egg in the Hole

  • Don’t have time for the crab salad?  Use crab mixed with a bit of mayo, dill, salt, white pepper, and paprika.
  • Use the leftover circles of bread for tea sandwiches.  Fill them with the leftover crab salad.
  • Butter and fry the leftover bread circles.  Serve them with the egg in the holes.
  • Want a runny yolk?  Separate the egg, pour the whites in the hole, and cook until set.  Add the yolk and cook until runny.
  • Can’t eat eggs?  Use sautéed mushrooms mixed with cheese to fill the whole.
  • Need a different bread?  Use rye, pumpernickel or whole wheat–just reduce the bread to two slices.
  • Want a garnish?  Use chives, green onions, or parsley.
  • Want to make it more gourmet?  Garnish with spicy red pepper jelly and use challah or brioche as the bread.
  • Want to make it for a crowd?  Make a sheet pan version and bake at 400 F for 12 to 15 minutes.

Ingredients

  • 1 loaf of thinly sliced white bread, like Pepperidge Farm (18 slices)
  • 6 tablespoons salted butter (85g)
  • 1/2 cup crab salad
  • 6 large eggs
  • 2 cups smoked Gouda cheese, grated (78 ounces or 198-226g)
  • 1/8 teaspoon salt
  • 1/8 teaspoon white pepper

Instructions

  1. Make the crab salad ahead of time.  Cover it and store in the fridge.
  2. Make 6 stacks of bread three slices high.  Butter the top and bottom slices in the stack.
  3. Cut out a hole in the center of the bread stack using a biscuit cutter.  Save the bread circles to make sandwiches with the leftover crab salad for lunch time or a late afternoon snack.
  4. Take off the first slice of bread in each stack.  Add two teaspoons of crab salad to each bread stack.  Spread it evenly with a spoon.  Put the top slice back on the stack with the buttered side showing.
  5. Crack one egg into a small bowl.  Break the yolk with the tongs of a fork and lightly beat.  Add 1/3 cup of grated Gouda cheese.  Mix together with a fork.
  6. Melt 1 tablespoon of butter in a large skillet over medium heat and swirl it around the pan.  Add three stacks of bread, placing the butter side down.  Carefully pour the egg and cheese mixture into one hole.  Add eggs to the other bread stacks, then sprinkle salt and pepper over the eggs.
  7. Cook until the bread is a nice golden brown color, roughly 2 minutes, then carefully flip over with a metal spatula.
  8. Cook the other side 1 to 2 minutes or until golden brown.  Remove from the skillet and place on a large plate.
  9. Cook the remaining three stacks of bread with the crab salad just like in steps 5 to 8.  Serve warm.
