Christmas Morning Casserole

Christmas morning casserole is very popular and for good reason.  You can make it the day before, and enjoy it the next morning with a little prep, so it’s perfect for when company comes.  The first time Busy Baker 🍞 and I tasted this was at a friend’s house in Thunder Bay, Ontario.  Apparently, this classic recipe has been around for a long time.  My version has a few twists.  I added Crimini mushrooms, green onion, and green and red bell peppers.  The traditional whole pieces of bread have been cubed up to improve the texture.  Cubed country ham replaces the ham luncheon meat, and the number of eggs was also increased to ensure each piece of bread wouldn’t be left out.

Emma is a huge fan of this Christmas morning breakfast casserole, and that’s why it’s been part of our Christmas breakfast menu for the past six years.  I encourage you to get a helper or two as the prep work will be more enjoyable and will be done quicker.  On Christmas morning, we normally serve this casserole with our cranberry-citrus fruit salad and an Orange Julius.

Christmas morning casserole is packed full of yummy ingredients that will help you refuel on special days when you feel like celebrating.


Ingredients

  • 1 loaf French bread, cubed

For the Egg Mixture

  • 10 eggs, beaten
  • 3 cups whole milk
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dry mustard
  • sprinkle of salt and pepper
  • 4 drops of Tabasco sauce

For the Filling

  • 8 ounces Crimini mushrooms, sliced
  • 1/2 green pepper, chopped
  • 1/2 red pepper, chopped
  • 5 cups country smoked ham, cubed
  • 2 cups extra sharp cheddar cheese, grated
  • 1 cup extra sharp white cheddar cheese, grated
  • 4 green onions, chopped (green part only)

For the Topping

  • 3 tablespoons butter, melted
  • 1/2 cup corn flakes, crushed (may need more)
  • 1 cup extra sharp white cheddar cheese, grated

For garnish

  • Sprinkle of chives, cut in 1/2 inch lengths
  • 1 Parsley, sprig per plate

Instructions

  1. Chop up the red and green pepper and saute in butter in a small frying pan until soft.
  2. Rinse and slice the mushrooms, and then saute them in butter.
  3. Cube up half the loaf of bread and place the pieces all over the bottom of a 10.5 x 14.5″ pan.
  4. Dice the country ham in small pieces and scatter evenly over the bread cubes.
  5. Add the red and green pepper, mushrooms, and green onion.
  6. Sprinkle two cups of grated extra sharp cheddar over the ham.
  7. Cube the rest of the bread loaf and place over top of the cheese, making sure to cover the whole pan.
  8. In a large bowl, beat the 10 eggs until smooth.  Whisk in the whole milk, Worcestershire sauce, four drops of Tabasco, dry mustard, and a sprinkle of salt and pepper, then pour it all over the bread and ham.  If you want to put it in the fridge overnight, then cover the casserole once this step is completed.
  9. Just before serving, melt the butter in the microwave and evenly pour over the top of the casserole.
  10. Crush up 1/2 cup of cornflakes and sprinkle generously over the casserole.
  11. As a finishing touch, sprinkle one cup of grated extra sharp white cheddar over the top.
  12. Bake at 350 F uncovered for 1 hour.
  13. Serve warm with a sprinkle of chives and a sprig of fresh parsley.

Notes

  • If you would like, cut the crusts off the bread.
  • To speed up the casserole assembling, prep these 7 ingredients ahead of time: bread cubes, mushrooms sliced, red and green pepper chopped, green onions chopped, orange and white cheddar grated, and corn flakes crushed.  Store them in labeled Ziploc bags in the fridge.  The cubed bread can be stored in a large covered bowl on the counter with the corn flakes baggie sitting on top.
