First, let’s define what a chip butty is. In the UK, a chip is a thick french fry with the potato skins removed. A butty is also a UK term- a contraction of bread and butter which roughly translates into the word sandwich.
A Waterford blaa, pronounced “blah,” is a soft, white roll that is has a dusting of flour on top. It gets it’s name from Waterford City in Ireland. It happens to be one of five foods in Ireland that have received the distinguished EU Protected Geographical Indication label. This means this bread is unique to Waterford, Ireland and only four bakeries in this city are certified to bake it. If you aren’t planning a trip to Waterford City anytime soon, you can still enjoy this delicious roll by making your own at home. A chip butty has its origins in England where they put the thickly cut chips (aka french fries) between slices of thickly buttered white bread. The Irish have their own twist by replacing the white bread with a soft white floury roll (aka Waterford Blaa). If you are a sandwich lover, you know how important the bread is. It can totally change the taste, texture, and overall experience of eating a sandwich. In Ireland, a purist would thickly butter the Waterford Blaa, pile on the chips, sprinkle on some salt, cut the sandwich in half, and quickly eat it standing up while it’s still hot.

A Chip butty served on a Waterford blaa is an Irish twist to a famous British classic sandwich. Turn some humble potatoes into hot, crisp fries, slice open your Irish Waterford blaa, slather on the butter, sprinkle on some salt and choose your toppings. It’s not low carb, but it is a UK comfort food that is perfect to make for St. Patrick’s Day or any day when you are really hungry.
- Cut the Waterford blaa buns in half lengthwise. Warm up the bun by microwaving it for 18 seconds, then generously butter each half.
- Take your hot, crispy french fries (aka chips) and put them on a cookie sheet. Drizzle some malt vinegar over top.
- Spread one tablespoon of ketchup on the top half of each bun.
- Assemble the fries on each of the four buns. You can put them in two layers facing the same direction or crosshatch them. It’s your choice.
- Put the top of the bun on the sandwich and slice in half.
- Eat immediately when the bun and french fries (chips) are still warm.
